Budget-Friendly Salmon Burgers
These delicious salmon patties are packed with healthy fats, protein, calcium, and Vitamin D. But best of all they are also easy, quick to throw together, make great leftovers, freeze well and are basically the perfect weeknight dinner. These taste great alone, but they really shine with a little goat cheese and caramelized onions. Enjoy!
Ingredients:
2 (14.75oz) cans salmon
2 large eggs, lightly beaten
1 Tablespoon Flax Meal
1 Tablespoon Lemon Juice
1 teaspoon Dijon Mustard
1⁄2 teaspoon dried thyme
1⁄4 teaspoon black pepper
1⁄2 teaspoon salt
2 teaspoon minced garlic (or 1
teaspoon garlic powder)
1 teaspoon onion powder
1⁄2 cup chopped fresh parsley (or
1⁄4 cup dried parsley)
1 Tablespoon oil for cooking
Directions:
If you were unable to find skinless salmon, open the can and separate the meat from the skin and any any large bones. The small bones have been pressure- cooked and will disintegrate as you stir the salmon into the spices- hooray for extra calcium! Discard skin and larger bones.
In a large bowl combine egg, flax meal, salmon meat, lemon juice, garlic, onion, parsley, mustard, thyme, salt and pepper until well incorporated.
Form salmon mixture into patties of desired size with uniform thickness for better cook time.
Heat olive/avocado/or grapeseed oil in a skillet over medium heat. When oil is just starting to shimmer add patties and cook 2-3 minutes per side, until browned and heated through. Alternatively, heat oven to 375 degrees F and cook patties on a cookie sheet about 5 minutes on each side, flipping when lightly browned.
