Fresh Cranberry Salsa
Who likes cranberry sauce? Anyone? Bueller…? That’s what I thought. Cranberry sauce is a classic American Thanksgiving side dish that shows up on tables every November despite the fact that so many people don’t even like it! I say keep the cranberries, lose the weird sauce.
This Fresh Cranberry Salsa gets rave reviews and recipe requests EVERY time I make it. It’s quick, easy, packed with antioxidants and fiber, and is the perfect fresh, tangy appetizer for your fall feast.
Fresh Cranberry Salsa
Ingredients:
1 (12 ounce) bag of cranberries, fresh or frozen
1 bunch of cilantro
1 bunch green onions
1 jalapeño pepper
2 limes
1/3 cup white sugar
Pinch of salt
Directions:
Wash and sort cranberries, wash and dry cilantro, green onion, limes, and jalapeño.
Roughly chop green onion into smaller pieces, about 3” in length.
Halve and juice the limes
Seed the jalapeño (unless you want it spicier, then keep the seeds), then mince.
All all ingredients to the bowl of a food processor and pulse until everything is about the same size and well-combined.
